The Teres Major, also known as the Shoulder Tender, is one of the best-kept secrets in the beef world. Often compared to the Filet Mignon for its incredible tenderness, this small, prized muscle comes from the chuck primal. Raised on our ranch and hand-trimmed by the Best of the Best Butcher Shop in Billings, the Teres Major offers a rich, beefy flavor with a melt-in-your-mouth texture that is sure to impress.

RAISED: Grown on Montana grass and grain-finished for the superior marbling and deep flavor profile our 4th-generation ranch is known for.

PROCESSED: Hand-cut in our own local USDA-inspected facility in Hardin, MT. Because there are only twoTeres Majors per animal, this is one of our most exclusive and limited cuts.

DRY-AGED: Every Shoulder Tender is dry-aged for tenderness and vacuum-sealed to maintain peak freshness and prevent freezer burn.

Ranch Cooking Tips:

Gourmet Versatility: With an average weight of 12 oz, this cut is incredibly versatile. It can be grilled whole like a small tenderloin, roasted, or pan-seared and sliced into "medallions."

Melt-in-Your-Mouth: To preserve its Filet-like tenderness, we recommend a quick sear over high heat and cooking to medium-rare.

The Perfect Presentation: Whether served as a standalone steak or sliced for a "white-tablecloth" steak sandwich, its fine grain makes for a beautiful plate.
