From the Wagon Cook: Smoked Flank Steak Tacos
“Smoking the flank steak at a low temp before slicing makes for the most tender street tacos you’ve ever had!”
Ingredients: 1 S Ranch Flank Steak, Olive oil, salt, 1 packet taco seasoning, 1 tbsp lime juice. For Serving: Street taco corn tortillas, cilantro, onion, Mexican-blend cheese, sour cream, salsa.
Directions:
Preheat: Set your pellet grill/smoker to 225°F.
Season: Rub steak with olive oil, salt, lime juice, and taco seasoning.
Smoke: Smoke for 2 hours or until internal temperature reaches 130°F (Medium-Rare).
Slice: Remove from smoker and cut into small, bite-sized pieces against the grain for maximum tenderness. Serve on warm tortillas with your favorite toppings.
