WET RENDERING BEEF SUET WITH SEA SALT

Turn your ranch-raised beef suet into smooth, high-quality tallow using this simple wet rendering method. The addition of sea salt helps draw out impurities, leaving you with clean, versatile tallow perfect for cooking or skincare.


Ingredients & Supplies

  • 1 pound of ground beef suet (or more, depending on your batch size)
  • 4 cups of water
  • 1 teaspoon of sea salt (per pound of suet)
  • Large heavy-bottomed pot or slow cooker
  • Fine mesh strainer or cheesecloth
  • Heat-safe storage containers

Instructions

  1. Prepare the Suet
    If your suet isn't already ground, cut it into small chunks for quicker melting. You can use a food processor for finer pieces if desired.

  2. Combine Ingredients
    Place the ground suet into a large, heavy-bottomed pot or slow cooker. Add 4 cups of water and 1 teaspoon of sea salt per pound of suet.

  3. Heat Slowly

    • Stovetop: Heat the pot over low to medium heat. Stir occasionally to prevent sticking.
    • Slow Cooker: Set to "Low" and allow it to heat gently.

    Over the next 1-3 hours, the fat will begin to melt, separating from the solids (cracklings). Do not let the mixture boil, as this can lead to burning.

  4. Strain the Mixture
    Once the suet is fully melted and the liquid fat is clear, carefully pour the mixture through a fine mesh strainer or cheesecloth into a heat-safe bowl. This step removes the cracklings and any impurities. Discard the cracklings or save them for a snack—they’re delicious fried!

  5. Separate the Layers
    Allow the strained liquid to cool for several hours (or overnight) in the fridge. The tallow will harden on top, while water and impurities settle at the bottom.

  6. Remove and Clean the Tallow
    Once solidified, lift the tallow off the top and scrape away any remaining impurities from the bottom. Rinse it briefly under cold water if needed.

  7. Store the Tallow
    Melt the cleaned tallow gently again if you’d like to pour it into jars, molds, or containers for storage. Store in an airtight container at room temperature or in the fridge for longer freshness.

  • For smoother tallow, repeat the melting and straining process one more time.
  • Use your rendered tallow in cooking (e.g., frying or baking) or as a base for homemade soaps, balms, or moisturizers.
