Chipotle Lime Beef Taco Bowls

Our ground beef is dry-aged before it's ground, which is why it browns so well and tastes like beef instead of filler. This is the weeknight bowl that disappears fastest at our table, and it stretches one pound across four hungry people.

Ingredients

  • 1 lb S Ranch 80/20 Ground Beef
  • ½ onion, diced
  • 1 tbsp tomato paste
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp chipotle in adobo
  • Salt
  • Fresh lime
  • Rice, black beans, guacamole, pico, cheese and sour cream, for building bowls

Instructions

  1. Brown the beef with the onion until deeply caramelized. Don't rush this step; the browning is the flavor.
  2. Stir in the tomato paste and cook 1–2 minutes.
  3. Add the spices and chipotle and cook until fragrant.
  4. Finish with a generous squeeze of fresh lime.
  5. Build bowls with rice, beef, beans and plenty of toppings.
