Smoked Flank Steak Tacos
Ingredients:
1 S Ranch flank steak
Salt to taste
1 packet taco seasoning
2 Tbsp. olive oil
1 Tbsp. lime juice
1 bunch cilantro
1 onion
Street taco-style corn tortillas
Directions:
Preheat pellet barbeque stove to 225°F degrees.
Rub flank steak all over with olive oil then sprinkle with salt. Drizzle with lime juice and rub in taco seasoning. Place flank steak on pre-heated smoker and smoke for two hours or until meat reaches at least 130°F. Remove steak and cut into small, bite-size pieces. Serve on street taco tortillas. Top with cilantro, shredded cheese, chopped onion and sour cream.
Suggested toppings: Mexican-blend shredded cheese, sour cream, salsa, and juice from lime wedge.
