 Mama's Chicken Fried Steak

Ingredients:

  • 5 cube steaks (about 8 oz each)
  • 1 cup all-purpose flour
  • 1 teaspoon Montreal seasoning (or steak seasoning blend)
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and freshly ground black pepper, to taste
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup vegetable oil, for frying

For the Gravy:

  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prepare the Cube Steaks:

    • In a shallow dish, combine the flour, Montreal seasoning, cayenne pepper, and additional salt and pepper to taste.

     

  2. Dredge and Coat:

    • In another dish, whisk together the milk, egg, and Worcestershire sauce.
    • Dredge each cube steak in the seasoned flour mixture, shaking off any excess.
    • Dip the floured steaks into the milk mixture, allowing any excess to drip off.
    • Dredge once more in the seasoned flour mixture, ensuring each steak is evenly coated.
  3. Fry the Steaks:

    • In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.
    • Carefully place the coated steaks in the hot oil, being careful not to overcrowd the skillet.
    • Fry the steaks for about 3-4 minutes per side, or until golden brown and cooked through.
    • Remove the steaks to a paper towel-lined plate to drain excess oil.
  4. Make the Gravy:

    • Pour off all but about 1/4 cup of the oil from the skillet.
    • Whisk in 1/4 cup of flour into the remaining oil in the skillet to create a roux.
    • Cook the roux over medium heat for about 2 minutes, stirring constantly, until it turns golden brown.
    • Gradually whisk in the milk, stirring constantly to avoid lumps.
    • Cook the gravy, stirring frequently, until it thickens and comes to a gentle boil.
    • Season with salt and pepper to taste.
  5. Serve:

    • Serve the chicken fried steaks hot, topped with the creamy gravy, add mashed potatoes and corn for the perfect comfort food!
