Mama's Chicken Fried Steak
Ingredients:
- 5 cube steaks (about 8 oz each)
- 1 cup all-purpose flour
- 1 teaspoon Montreal seasoning (or steak seasoning blend)
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and freshly ground black pepper, to taste
- 1 cup milk
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1/2 cup vegetable oil, for frying
For the Gravy:
- 1/4 cup all-purpose flour
- 3 cups whole milk
- Salt and freshly ground black pepper, to taste

Prepare the Cube Steaks:
- In a shallow dish, combine the flour, Montreal seasoning, cayenne pepper, and additional salt and pepper to taste.

Dredge and Coat:
- In another dish, whisk together the milk, egg, and Worcestershire sauce.
- Dredge each cube steak in the seasoned flour mixture, shaking off any excess.
- Dip the floured steaks into the milk mixture, allowing any excess to drip off.
- Dredge once more in the seasoned flour mixture, ensuring each steak is evenly coated.

Fry the Steaks:
- In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.
- Carefully place the coated steaks in the hot oil, being careful not to overcrowd the skillet.
- Fry the steaks for about 3-4 minutes per side, or until golden brown and cooked through.
